Preheat your oven to 220°c. While that’s heating up, par-boil the potatoes for 8-12 minutes - just until they’re tender enough for a fork to pierce to the middle, then drain them and leave to dry for a minute.
To make it into a more substantial meal you could also add some fresh veggies like bell peppers or leafy greens.
