Orange Curry Tofu Pasta

This orange curry pasta is one of those midweek dinners that feels a bit different but still comes together quick and using simple ingredients. It's lightly spiced and finished with a hit of orange for something unexpected - and it all cooks in one pan to keep the washing up down.

Notes

Try making it gluten free with gluten free pasta, and check that your curry paste is also gluten free. Change up the vegetables by using a combination of carrots, courgettes (zucchini) or peas. Keeps well in the fridge for up to five days. It can be frozen for up to three months. Be sure to defrost and then reheat thoroughly in the microwave for best results.
