Hey Karen, I'm so glad to read you are enjoying the recipes! Yes, this can be made in advance, the caramel does keep well for a few days, we kept it in a container for 3 days. And the rice pudding reheats well too, I just added a little soy milk and heated in the microwave. I didn't reheat the caramel though, just drizzled it on after heating the rice pudding.
