Ingredients: 90 g Sushi rice; 1 tbsp Rice vinegar; 0.5 tbsp Sugar; 0.25 tsp Salt; 125 ml Water; 200 g Super-firm tofu; 1 tbsp Chipotle paste; 1 tbsp Light soy sauce; 1 tsp Vegan honey; 2 tbsp Water; 1/4 Juice of lime; 10 Inari-age; Sriracha mayo; Salsa; Fresh coriander

We wanted to create something a little different with inari. Don't get us wrong, inari pockets filled with just sushi rice, a little soy sauce and wasabi is the best bit of any sushi platter. But we're pretty pleased that we got creative because this Japanese-Mexican hybrid is really delicious. Perfect for a party platter or if you're just feeling a bit fancy one lunchtime.
