Tofu Shepherd’s Pie

This is proper comfort food – the kind you pile high on a cold evening and go back for seconds. We’ve swapped the traditional mince for baked tofu, and honestly, it hits the spot. It’s rich, hearty, and so full of flavour you’ll be glad there are leftovers waiting for tomorrow.

Notes

- Once cooked, the shepherd’s pie will keep in the fridge for up to 4 days, just reheat in the oven or microwave until piping hot. - This freezes beautifully too - cool completely first, then portion it up. - You can swap petit pois for frozen garden peas or chopped green beans to mix it up. - The baked tofu gives the best texture, but if you’re short on time, you could use 2 cups TVP mince (rehydrate in vegan beef stock or veggie stock first) or frozen vegan mince. - For a slight variation, try replacing half of the potatoes for sweet potatoes, and make the mash with both types of potatoes!

Any subs for the gravy? I can't find any vegan gravy around.

Miso paste could be a good substitute or around 1 tbsp light soy sauce (or maybe both). If you have Bisto where you are, the original is vegan even though isn't labelled as such, and so is the reduced salt version (which is what we usually use)! hope it works out 💕
