Super-firm tofu is ideal here as it holds its texture and won’t release excess water while steaming. If using extra-firm tofu, press it well first to avoid a loose filling. Standard round dumpling or gyoza wrappers work best. If yours are very thin, handle gently when layering so they don’t tear. Use ramekins around 10–12 cm wide. The tofu filling can be mixed up to a day in advance and kept covered in the fridge. Assemble and steam just before serving.
