Add a splash of oil to a large pan on medium-high heat and fry off your onion until softened. Throw the garlic, ginger and chilli in there and fry for another minute.
If you'd prefer to just cook the cauliflower and tofu in the sauce, that works too! You'll just need to cook the sauce for longer, so keep an eye on the consistency and add a little water to loosen if it needs it.
