Double Tofu Dan Dan Style Noodles

Dan Dan noodles had their moment on Instagram last year but it's about time they got the double tofu treatment! We've whacked in silken tofu, bumped up the protein to 36g per portion and lowered down the oil in this version! Hope you enjoy this one - it's super quick to make too.

Notes

You can use any noodles - it doesn't have to be knife-cut. For toasting the Szechuan peppercorns - use a frying pan, over a medium heat, no oil in the pan and add the peppercorns in for 3-5 minutes. Be careful not to burn them, then use a pestle and mortar (or spice grinder) to grind into a fine powder.
