You can use any noodles - it doesn't have to be knife-cut. For toasting the Szechuan peppercorns - use a frying pan, over a medium heat, no oil in the pan and add the peppercorns in for 3-5 minutes. Be careful not to burn them, then use a pestle and mortar (or spice grinder) to grind into a fine powder.
