Notes

These pancakes will darken quicker than regular pancakes (without silken tofu in the batter). It's better to cook them for longer on a lower heat so that they are not cooked on the outside but underdone on the inside! If you use soy milk as the plant milk in the batter, you'll be able to maximise the protein content. Makes 8 pancakes, nutrition is worked out for 4 pancakes per person, and this recipe serves 2, but is easily doubled.

Greetings, I made these with Silken Tofu brand in USA and they were too runny. Can you recommend a tofu brand I can find in the states? Thank you!

Oh sorry to hear that Marlene! Have you got Mori Nu brand in the US? I know that one is widely available. We usually use Clearspring if you have that. How much silken tofu did you add? These pancakes do take a little longer to cook (on a lower heat) than regular pancakes but they don't usually come out runny. Let me know and I'll see if I can help!
