Notes

We like to serve this cheesy whipped tofu with roast potatoes made in the air fryer, so they can be low oil. We like to add potato all-rounder from Just Spices to take them up a level!

I made this for dinner tonight, with a few tweaks: I subbed grated parmesan (forgive me) for the nutritional yeast that I couldn't find, and I subbed my homemade "tomato sludge," pulled from the freezer (a long cooked braise of tomatoes, aubergines, onion, garlic, and romano beans that I made and froze last summer) for the chutney. This was an enormously satisfying meal, and it came together much more quickly than I might have imagined.

I liked using a savory tomato-based braise as the counterpoint here, rather than a sweet chutney. It really was a delicious, satisfying dinner.
