The peppercorns soften up during cooking and provide a fiery edge to the dish when you bite into them, but if you're not into that you can just use ground black pepper in place - start with 1 tsp and add more if you'd like. You can easily make this dish with beancurd sheets or regular tofu, rather than beancurd sticks.
