Viral Japanese Cheesecake (Tofu Edition!)

You’ve probably seen the viral 2-ingredient Japanese cheesecake everywhere by now - but here's the Tofu Club edition! Silken tofu is blended with vegan Greek-style yoghurt to recreate that light, cheesecake texture, which is then chilled until set. You can't taste the tofu at all (just make sure it's well mixed with the yoghurt) and it has 11g protein per portion, not bad for a dessert!
