Tofu Pad Krapow (Holy Basil Stirfry)

We're so excited to share this one with you all - Pad krapow is Dan's favourite Thai dish! While it's traditionally very spicy with lots of bird's eye chillies and the peppery flavour of the holy basil, you can tone it down so that it's the spice level that you love. While it would often use minced pork, we think that baking tofu and then rehydrating it in the sauce is the perfect alternative. And we hope you love it too...

Notes

Holy basil isn't the easiest to find and is often substituted for Thai basil - it's not the perfect substitute, but it adds a nice anise flavour. You could alternatively use fresh basil (the kind that would go in an Italian pasta sauce). Pad krapow is traditionally a very spicy dish. We go for 4 bird's eye chillies which is relatively spicy, but you can easily scale up or down to your taste. Just be careful to ventilate your kitchen as the air can get fiery (not sharing this from experience or anything 🙈) Vegetarian oyster sauce is also sometimes called "mushroom vegetarian stir fry sauce", or similar, depending on the brand. Nutritional info is without rice.
