Step 1
Place a large pan over a medium high heat and pour in the blueberries. Cook down until it resembles a compote, then stir in the lemon juice. You can mash the blueberries once they have softened to get an even texture.

Keeps for 3 days in the refrigerator, so it's great for meal prep. For a true cheesecake-like consistency, let it set in the fridge before serving. If eaten right away, the texture will be softer and less firm. Cook and prep time doesn't include resting overnight - ideally making this recipe at least 4 hours in advance will give the best consistency, but can be eaten straight away.

I could not find Weetabix in the USA so I used shredded wheat cereal instead.

Oh I didn't realise Weetabix wasn't available in the US! How was it with the shredded wheat cereal?

I really like you folks, and I love your recipes, but I think the nutritional counts on this recipe are just nuts. I ran it through a couple of different apps and I came up with about 40 grams of protein per serving, not 60. Which is still a whole lot, making this a super healthy option, but...not 60. Maybe recheck?

Oh my, I have got no clue what happened there but they were mental! I have updated all now, it was completely different from what MyFitnessPal says, so I don't know if the in-built AI replaced what we put in or something. I've attached the image from MyFitnessPal just to show it there too.
