Katsu Curry Donuts

We saw somebody create a “cheat” version of Japanese curry donuts, using bread instead of making the dough from scratch, and we had to urgently try it out. The Japanese curry filling is a really quick one using TVP mince and those curry roux blocks that you can buy. But perhaps the most interesting part is that we decided to try out using blended silken tofu instead of the usual flour/water batter for getting the breadcrumbs to stick - it works really well!

Notes

The curry is best refrigerated overnight before using to make the donuts because the consistency once cooled is much easier to work with.

Instead of deep-frying, you can toast the breadcrumbs in a dry pan first, coat the donuts, then air fry at 190°C for around 10 minutes.

Use the leftover bread to make breadcrumbs or croutons.
