Double Tofu Curry

Serve up a portion of this with some quinoa and you’re packing in a decent 30g of protein, without even adding a side of veg 💪 Btw, we cooked our quinoa in some veg stock and a good helping of the @bartingredients pilau spice blend and it was 👌

Am I missing a part where you blend the silken tofu with something? I just added it to the pot with the tomatoes and stirred/mixed, but it's pretty chunky.

Oh no, so sorry, I just noticed that the written instruction is missing to blend together the silken tofu and the tomatoes! We have made it without blending but it does take some stirring... I'm so sorry, I have updated the instructions now but hope it turned out ok!

Absolutely delicious! Super quick and easy and great protein hit! I used tandoori masala for the tofu marinade and thanks for the recommendation on the pilau seasoning - this jazzed up my cauliflower rice really nicely :)

Nice! So glad you enjoyed it - we find ourselves coming back to that one pretty regularly too. We need to get some tandoori masala and give that a go!
