Pre-cooked rice works best for fried rice. If you forget though, you can cook some rice, spread it out on a tray and cool it in the fridge until you're ready for it. Any type of firm to super-firm tofu is fine for this really, but we personally like super-firm for this one!

Nice and spicy! Wish there was a bit more detail on timings at each step, but maybe thats a me issue
