Notes

If you want to scale back the pickles you can simply use the pickle juice in the dressing, leaving out the chopped pickles from the recipe, and you end up with a really nice tangy ranch pasta! We made this as 2 lunch/dinner sized portions, but it could easily be served as a buffet or picnic pasta salad and scales well. Extra-firm or super-firm tofu both work well for the buffalo crumb.
