Tofu Paper in the VP Test Kitchen

So I did a deep Google dive for tofu paper, and I learned a couple of useful things. One is that while it is called Tofu Paper on the West Coast of the US, on the East Coast it's more likely to be called Tofu Sheets (and you want to be sure you are not buying Tofu Skins or yuba, which are...not the same thing). Most usefully, it is known in Chinese as ga dou fu, and yes, I found it at my local Asian market.
